Abstract: La globalizzazione dei mercati e delle filiere agroalimentari pone urgenti questioni di lotta ai fenomeni di c.d. Italian sounding e di consumer protection. L’attuale scenario storico impone, pertanto, un ripensamento del concetto di qualità, di sicurezza alimentare e delle tecniche tradizionali di tracciamento. In tale contesto, l’ingresso delle nuove tecnologie nel settore agroalimentare rappresenta una valida soluzione a tutela del patrimonio agroalimentare nostrano, tanto da essere ormai in voga l’espressione “agrifood tech”
The globalization of markets and agrifood chains raises urgent questions for the fight against the phenomena of so-called Italian sounding and consumer protection. The current historical scenario, therefore, requires a rethinking of the concept of quality, food safety, and traditional tracking techniques. In this context, the entry of new technologies into the agrifood sector represents a valid solution to protect our agri-food heritage, so much so that the expression “agrifood tech” is now in vogue
